For thousands of years, winemakers have honed their craft using traditional techniques and skills passed down through generations. The computer learned to recognize different levels of water stress in plants, similar to how an experienced viticulturist would through traditional observation methods.

AI can also enhance winemaking during fermentation, aging, and blending. AI-powered systems analyze wines’ chemical and sensory properties, suggesting optimal conditions and ingredients for creating a desired flavor profile. This saves time, reduces waste, and enables winemakers to experiment with new combinations and styles.

AI is revolutionizing wine marketing as well. Tastry, a California-based startup, uses AI to analyze thousands of wines each year, generating vast amounts of data to help winemakers and retailers target their products more effectively. Tastry’s technology decodes aroma and flavor profiles by chemically analyzing wines in their lab. Combining this data with consumer palate data from quizzes, Tastry can predict consumer product scores with over 92% accuracy. This powerful tool provides winemakers and retailers with valuable insights to improve sales and grow their customer base.

AI-assisted wines can have unique and nuanced characteristics that reflect their origin’s terroir, climate, and culture. AI complements and amplifies human skills and knowledge, not replacing them. It can also help wine lovers discover new wines that match their taste preferences and provide valuable information to winemakers and retailers.

There are concerns about AI in winemaking, such as the fear that AI will replace human creativity and expertise or produce generic and uniform wines. However, these concerns are counter to the current reality. AI assists winemakers in perfecting the process, creating beautiful wines that complement human creativity and expertise.

While AI’s use in the wine industry is still in its early stages, its potential to transform the industry is enormous. With the ability to optimize winemaking, harvesting, and marketing, AI is set to revolutionize the way we think about wine.
